Minted Lamb Chops with Mashed Vegetables

Lamb Chops: Ingredients

– X1 pack of lamb chops
– 2 tablespoons olive oil
– 2 garlic cloves, minced
– 1 tablespoon fresh rosemary, chopped
– Salt and pepper, to taste

Mashed Vegetables: Ingredients

– 3 large potatoes, peeled and chopped
– 2 carrots, peeled and chopped
– 1 parsnip, peeled and chopped
– 2 tablespoons butter
– 1/4 cup milk
– Salt and pepper, to taste

Minted Gravy Sauce: Ingredients

– 1 cup lamb or beef stock
– 1 tablespoon fresh mint, finely chopped
– 1 tablespoon red wine vinegar
– 1 tablespoon flour
– 1 tablespoon butter
– Salt and pepper, to taste

Method

Prepare the Lamb Chops:
In a bowl, mix the olive oil, minced garlic, and chopped rosemary. Season with salt and pepper.
Rub the mixture over the lamb chops and let them marinate for at least 30 minutes.
Preheat a grill or skillet over medium-high heat.
Cook the lamb chops for 3-4 minutes on each side, depending on thickness, until they reach your desired level of doneness.
Remove the lamb chops from the heat and let them rest for a few minutes before serving.

Prepare the Mashed Vegetables:
Boil the potatoes, carrots, and parsnip in a large pot of salted water until tender, about 15-20 minutes.
Drain the vegetables and return them to the pot.
Add the butter and milk, then mash until smooth and creamy.
Season with salt and pepper to taste.

3. Prepare the Minted Gravy Sauce:
In a small saucepan, melt the butter over medium heat.
Stir in the flour and cook for 1-2 minutes to create a roux.
Slowly whisk in the lamb or beef stock, ensuring there are no lumps.
Add the red wine vinegar and chopped mint.
Simmer the sauce for 5-7 minutes until it thickens, stirring occasionally.
Season with salt and pepper to taste.

Serve:
– Plate the lamb chops alongside a generous portion of mashed vegetables.
– Drizzle the minted gravy sauce over the lamb chops and serve immediately.
