Fajita Style Chicken Pasta

Ingredients

  • 1 pack of Diced Chicken
  • 225g of preferred pasta
  • 1 tbsp olive oil
  • 1 onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 tbsp fajita seasoning
  • 1tbsp smoked paprika
  • 1 cup of heavy cream

Method

Cook the Pasta: – Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside. 

Cook the Chicken: – In a large skillet or frying pan, heat 1 tablespoon of olive oil over medium-high heat. Add the diced chicken and season with salt, pepper, and half of the fajita seasoning. – Cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the pan and set aside.

Cook the Vegetables: – In the same pan, add another drizzle of olive oil if needed. Add the sliced onions and bell peppers. Cook for 4-5 minutes until they start to soften. – Add the remaining fajita seasoning and smoked paprika. Cook for another 2 minutes until the vegetables are well coated and fragrant. 

Make the Sauce: – Reduce the heat to medium. Add the heavy cream and bring to a simmer. Stir in the grated cheddar until melted and the sauce is smooth. 

Combine Everything: – Add the cooked pasta and chicken back to the pan. Toss everything together until the pasta and chicken are evenly coated with the sauce and vegetables. – Cook for another 2-3 minutes, allowing the flavours to meld. Taste and adjust seasoning if necessary.
